Yamunadevi Puraikalan is an Associate Professor in the department of Nutrition Science. She is particularly interested in developing a healthy food product that utilizes value-based products and reduces food waste. In her opinion, supplementing the community with these food products can reduce the risk of metabolic diseases. Her passions include developing healthy products that can be highly beneficial to society. Due to the fact that children are the future of the nation, she intends to target them specifically as a target population. She has 14 years of teaching experience and three years of clinical experience. Before coming to Dominican University, she taught Master's level courses at a university in India and mentored more than 17 dissertations. Her teaching experience in the nutrition major ranges from 100 to 400 level courses.
