Elisa D'Urso Fischer has over 30 years’ experience in dietetics and education. Upon completing her undergraduate degree in special education she taught special need children. She pursued her interest in nutrition by completing her masters in clinical nutrition and went on to work in a wide variety of hospital and clinic settings. Elisa was the nutritionist at the first hospital based women’s health clinic in the Chicago area. While there she developed a combined nutrition, cooking and exercise program for ending overeating. For almost 10 years Elisa was in private practice at an outpatient counseling center that specialized in treating women and men recovering from eating disorders. She led classes and groups using body cued, non-dieting techniques. While working at the White Crane Senior Wellness Center, Elisa edited and published a cook book for older adults Prior to working at Dominican University, she worked under a USDA Family Nutrition Education Grant. Her primary responsibilities included developing culturally sensitive nutrition curriculums for adults through pre-school aged children. She also completed a research project documenting the effectiveness of a non-dieting program for adolescent girls. Prior to working at Dominican University, she worked under a USDA Family Nutrition Education Grant. At Dominican University Elisa served as a clinical preceptor, assistant director and finally the director of the dietetic internship programs at D.U. She helped to establish the group model for the brand new dietetic/M.B.A. internship program. She also supervised students and interns in the federally funded Head Start Grant. Most recently, she has enjoyed teaching online nutrition courses.
