Carol is a nutrition and education professional with over 25 years in national and global business roles related to food and nutrition. Carol has deep perspective on food, nutrition, and public health and a seasoned business perspective in strategy, management, and marketing.

Carol teaches Nutrition 346 at Dominican University. She also provides education consulting services for Northwestern Kellogg Graduate School of Management for executive education clients. Carol has also taught in the MBA program at Lake Forest Graduate School of Management.

As a registered dietitian and business leader, Carol combines an understanding of health & food with business strategy, operations, and planning to deliver effective outcomes. She received her Bachelor of Science in Nutrition and Medical Dietetics with High Honors from the University of Illinois and her Master’s in Business Administration, with a Marketing focus from the Brennan School of Business at Dominican University, River Forest, Illinois.

Carol has two grown children, and she and her husband live in Park Ridge, Illinois with the family dog where they enjoy long walks in these pandemic times!
