Brooke Schantz Fosco is the Coordinated Programs in Dietetics Assistant Director and an adjunct professor at Dominican University. She has been a Registered Dietitian Nutritionist (RDN) for more than a decade.

She received her Bachelor of Science in Dietetics from Purdue University and Master of Science in Nutritional Sciences from the University of Illinois at Urbana-Champaign. She is also a Certified Specialist in Sports Dietetics (CSSD).

In addition to working in academia, Brooke has worked as a pediatric dietitian, outpatient dietitian, inpatient dietitian, community dietitian, educator, and sports nutrition.

Brooke has served as President of the Illinois Academy of Nutrition and Dietetics and Chicago Academy of Nutrition and Dietetics. She has also served on the Academy’s Member Value Committee, Diversity Committee, and Nutrition Care Process Research Outcomes (NCPRO) Advisory Workgroup. She is now currently serving on the Nutrition Care Process Research Outcomes (NCPRO) Committee.
